Margherita Pizza: Dolcetto

Whether it’s brick oven, fire-roasted off the grill, or straight out of the turbo vex toaster oven that sits on top of your microwave that sits on top of your refrigerator in your tiny apartment somewhere in New Jersey, you’d be doing your taste buds a disservice by not pairing a glass of dolcetto with your next slice. Dolcetto lacks the acidity that would cut through the richness of cheesy pizza, but it has just enough to highlight the sharpness of those sweet tomatoes and cut right through the fresh mozza of a margherita. You can even serve the wine slightly chilled as dolcetto is one of the few exceptions to the age old rule.
